Fried Rice

2 cups of rice
2 eggs
1-2 cups of mixed veggies, chopped
1-2 cups of diced ham
ketchup

I cook the rice in our rice cooker.  Then in a wok or large skillet over medium-high heat, put the veggies & ham in & then crack the eggs & scramble them in for just a minute before adding the cooked rice.  Then add ketchup to taste.  It's really that simple. Drew thinks this needs to be a staple in our weekly menu, & because it's so cheap & easy, I agree! :-)
