Chicken Breasts Dijon

From Southern Living - Light & Easy Comfort Food

1/3 cup dry breadcrumbs
1 tbsp grated Parmesan cheese
1 tsp tried Italian seasoning
1/2 tsp dried thyme
1/4 tsp salt
1/4 tsp pepper
2 tbsp Dijon mustard
4 (4 oz) skinless, boneless chicken breast halves
1 tsp olive oil
1 tsp reduced-carlorie stick margarine

1) Combine first 6 ingredients in a shallow bowl or pie plate, stir well. Brush mustard over both sides of chicken; dredge in breadcrumb mixture.
2) Heat oil & margarine in a large nonstick skillet over medium-high heat. Add chicken, and cook 6 minutes on each side or until done.
