Beer Can Chicken

Ingredients:
1 whole 4-5 lb chicken
1 12 ounce can beer
2 cloves garlic, minced
2 springs fresh rosemary
2 tsp olive oil
1 tsp dried thyme
1/2 tsp crushed red pepper flakes
juice of 1 lemon

For rub:
1 tsp coarse salt
1 tsp fresh rosemary, chopped
1 tsp dried thyme
1/2 tsp freshly ground black pepper
zest of one lemon

Combine all rub ingredients in small bowl and set aside. Remove neck & giblets from chicken. Sprinkle rub all over inside and outside of chicken. Open can of beer and drink or discard 1/4-1/2 of it. Place all ingredients in beer can. Make sure to pierce extra holes in the top of the can and then place the chicken on top of the can. Place on cookie sheet and grill 30 minutes or until chicken reaches 170 degrees.

Update 1/1/10 - apparently this can also be done in the oven. Bake at 350* for about 2 hours, or until the thigh meat reaches 170*. If top starts browning too much, tent with foil.

This is my favorite summer recipe. We chopped up onions, zucchini, potatoes, peppers, esparagus and tossed them in olive oil with salt & pepper and put them on the cookie sheet about 15 minutes w/ the chicken and it is DELICIOUS!!!! Hope you enjoy as much as we do! :)
