I adapted this from a recipe I found my boss's Weight Watchers booklet... It was delic!
1 avocado
juice of 1/2 lemon or lime
1 can corn
1 can black beans, rinsed
1 bundle green onions
3 tbsp fat free sour cream
3/4 cup medium or hot salsa
1 tbsp apple cider vinegar
In a medium bowl, mix together the sour cream, salsa, & vinegar until creamy & well blended. Dice the avocado and squeeze a lemon or lime over it (the juice keeps the avocado from browning so quickly). Chop the onions and add all ingredients to the salsa mix. Mix until all the veggies & beans are well coated and serve with tortilla chips.
Delicious & healthy! We had some corn that we had cut off the cob last year & froze, so I used that instead of a can of corn... It was SO GOOD! I will definitely be making this again in the near future... it is a perfect snack or even great for a light lunch!
