Add 2 tablespoons extra-virgin  olive oil. Halve the zucchini lengthwise then thinly slice into half moons and  add to the pan. Cook 2 to 3 minutes, then chop onions &amp;amp; bell pepper and&amp;nbsp;add to the pan. Season the vegetables well with salt and pepper. When the onions  are tender, about 5 minutes, add defrosted/drained&amp;nbsp;spinach, separating into small bits  as you handle it and toss to heat through. Transfer  veggies to a dish and return skillet to stove top. Add remaining 1 tablespoon of  extra-virgin olive oil and the butter. When the butter melts into extra-virgin  olive oil, add 2 rounded tablespoons of flour and cook a minute or so, then  whisk in stock and milk. Bring to a bubble and thicken the sauce, reducing it 2  to 3 minutes. Season the sauce with salt, pepper and nutmeg. Slide vegetables  back into sauce.&lt;br /&gt;&lt;br /&gt;Heat a pot of water to a boil for pasta. Salt boiling water and cook pasta to  al dente. Heads up: reserve a ladle of the hot cooking water just before you  drain pasta. &lt;br /&gt;&lt;br /&gt;Place the part-skim ricotta in a large shallow bowl and combine with a ladle  of boiling, starchy pasta cooking water. Stir to combine then add in a couple of  handfuls of grated parmesan&amp;nbsp;cheese. &lt;br /&gt;&lt;br /&gt;Drain pasta and toss with cheeses. Barilla plus thin spaghetti &lt;br /&gt;1 red bell pepper, sliced&lt;br /&gt;3 scallions, sliced&lt;br /&gt;1 6 oz. bag snap peas&lt;br /&gt;2 carrots, peeled and shredded&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;For marinade:&lt;br /&gt;2 tbsp. light soy sauce&lt;br /&gt;1 tbsp. rice wine vinegar&lt;br /&gt;1 tbsp. honey&lt;br /&gt;1 tbsp. thai chili paste &lt;br /&gt;&lt;br /&gt;For pasta sauce:&lt;br /&gt;1 tbsp. creamy peanut butter &lt;br /&gt;3 tbsp. light soy sauce&lt;br /&gt;&lt;br /&gt;Whisk together soy sauce, vinegar, honey and thai chilie paste. Toss tofu in mixture, refrigerate for 30 minutes to a few hours.&lt;br /&gt;&lt;br /&gt;Preaheat oven to 450 degrees. Bring a large pot of water to a boil.&lt;br /&gt;&lt;br /&gt;Line a baking sheet with foil, spray with nonstick spray. Place tofu on the baking sheet, and roast for 15 minutes, tossing a few times to brown all over.&lt;br /&gt;&lt;br /&gt;In a large mixing bowl, combine soy sauce and peanut butter, whisk until smooth. Remove from heat.&lt;br /&gt;&lt;br /&gt;When quinoa is cooked, add tomato sauce, cottage cheese, half of the mozzarella and parmesan, basil, oregano, fennel, crushed red pepper flakes, and season with salt and pepper to taste.&amp;nbsp;&amp;nbsp;Add vegetables from pan&amp;nbsp;&amp;amp; stir well.&lt;br /&gt;&lt;br /&gt;Pour into a casserole dish, sprinkle with remaining cheese.&amp;nbsp; Bake for 30 minutes, until cheese is golden and casserole is bubbly.&lt;br /&gt;&lt;br /&gt;&lt;em&gt;This was good the first day &amp;amp; pepper&lt;br /&gt;salsa&lt;br /&gt;&lt;br /&gt;Spray a pan with nonstick cooking spray.&amp;nbsp; Place the two whole wheat tortillas to cover the entire bottom &amp;amp; sides of pan (use more tortillas if needed).&amp;nbsp; Put veggies down on top of the tortillas.&amp;nbsp; In a separate bowl, beat eggs with a bit of milk &amp;amp; whatever seasoning you use &amp;amp; pour mixture over veggies.&amp;nbsp; Bake at 350* for 30 minutes.&amp;nbsp; Obviously I changed the meal plans quite a bit this week.&amp;nbsp; I realized that I had ingredients that would go bad if I waited to use them, so I changed things up a bit.... over at &lt;a href="http://veggiebyseason.com/"&gt;Veggie by Season&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;1 block of extra firm tofu, pressed and cubed in 1" pieces&lt;br /&gt;1 tsp. olive oil&lt;br /&gt;2 medium carrots, peeled and sliced thinly&lt;br /&gt;12&amp;nbsp;oz. frozen broccoli&lt;br /&gt;12&amp;nbsp;oz. frozen&amp;nbsp;snow peas&lt;br /&gt;1 15 oz. can of corn&lt;br /&gt;&lt;br /&gt;sauce:&lt;br /&gt;3 garlic cloves, minced&lt;br /&gt;1 scallion, minced&lt;br /&gt;1/4 c. soy sauce&lt;br /&gt;1 tbsp. rice wine vinegar&lt;br /&gt;1/2 tbsp. apple cider vinegar&lt;br /&gt;1/2 tbsp. water&lt;br /&gt;1 tsp.&amp;nbsp;olive oil&lt;br /&gt;1 tbsp. brown sugar&lt;br /&gt;1 tsp. hot sauce (I used Louisiana Hot Sauce)&lt;br /&gt;1 heaping tsp. cornstarch (I used whole wheat flour because it's what I had)&lt;br /&gt;10 Japones chilies&lt;br /&gt;&lt;br /&gt;Optional: the original recipe called for sesame oil instead of olive oil but sesame oil is 1) expensive &amp;amp; 2) I never use it, so I subbed out olive oil.&amp;nbsp; But I read several places that if you want to get the sesame flavor, just roast sesame seeds with olive or vegetable oil &amp;amp; add that.&lt;br /&gt;&lt;br /&gt;Directions:&lt;br /&gt;Place tofu in a press, set aside for 5 minutes.&amp;nbsp; (I pressed mine 3 times&amp;nbsp;for several minutes each &amp;amp; it still could've used more pressing.)&lt;br /&gt;&lt;br /&gt;Steam vegetables for ~10 minutes.&lt;br /&gt;&lt;br /&gt;In a small dish, whisk together all sauce ingredients except chilies.&lt;br /&gt;&lt;br /&gt;Heat a wok over medium-high heat.&lt;br /&gt;&lt;br /&gt;Add 1 tsp.&amp;nbsp;oil and tofu &amp;amp; toss to sear the outside. &lt;br /&gt;&lt;br /&gt;Whisk sauce mixture again (make sure to get cornstarch&amp;nbsp;[flour]&amp;nbsp;if it settles to the bottom), pour over tofu, toss in chilies.&lt;br /&gt;&lt;br /&gt;Use a spatula to gently mix tofu and sauce, bring to a simmer and turn to low heat.&lt;br /&gt;&lt;br /&gt;Simmer for a couple minutes, sauce will thicken quite a bit.&lt;br /&gt;&lt;br /&gt;Spoon vegetables into bowl, spoon tofu and sauce mixture over top.&amp;nbsp; Serve with rice.&lt;br /&gt;&lt;br /&gt;Serve immediately.&lt;br /&gt;&lt;br /&gt;&lt;em&gt;Umm, why have I never tried tofu before?!&amp;nbsp; This was a &lt;u&gt;delicious&lt;/u&gt; meal.&amp;nbsp; pale green parts only, cut into 1-inch rounds, rinsed well&lt;br /&gt;2 carrots, cut into 1-inch rounds&lt;br /&gt;1 small onion, cut into 1-inch pieces&lt;br /&gt;3 garlic cloves&lt;br /&gt;8 cups water&lt;br /&gt;5 flat-leaf parsley sprigs&lt;br /&gt;2 thyme sprigs&lt;br /&gt;1 dried bay leaf&lt;br /&gt;2 teaspoons whole black peppercorns, crushed&lt;br /&gt;&lt;br /&gt;1) Cook leeks, carrots, onion, &amp;amp; Preheat oven to 350*.&lt;br /&gt;2. Whisk together the flour, eggs, pumpkin, peanut butter,&amp;nbsp;&amp;amp; cinnamon in a bowl. Dough should be dry and stiff. Roll the dough into a 1/2-inch-thick roll. Use cookie cutter to cut shapes. Place on greased cookie sheet.&lt;br /&gt;3. Bake in preheated oven until hard, about 40 minutes.&lt;br /&gt;&amp;nbsp; &lt;br /&gt;&lt;em&gt;Charlie &amp;amp; Suzie absolutely LOVE these.&amp;nbsp; We made them because we are out of treats for them &amp;amp; 2 whites)&lt;br /&gt;Sugar (4 tbsp)&lt;br /&gt;Mascarpone cream (1 cup + 1 tbsp)&lt;br /&gt;Coffee (just a pot - enough to soak all of the lady fingers in it - make it strong for best flavor)&lt;br /&gt;Savoiardi (300 grams - lady fingers)&lt;br /&gt;Sour Cocoa (to taste - for the top)&lt;br /&gt;&lt;br /&gt;Whip the yolks with the sugar, add mascarpone cream &amp;amp; mix well.&amp;nbsp; In a different bowl, mix the egg whites until thick enough to stand alone (merengue-like), then add them to the first mixture.&amp;nbsp; Soak each cookie in cold coffee &amp;amp; then lay them in a casserole dish.&amp;nbsp; Bring to a boil and then simmer for approximately 15 minutes&amp;nbsp; While simmering, run frozen shrimp undercold running water until fully thawed and remove tails.&amp;nbsp; Then add shrimp to pot for 5 minutes.&amp;nbsp; Then add remaining ingredients.&lt;br /&gt;&lt;br /&gt;Makes 6 servings.&amp;nbsp; 266 calories per serving.&lt;br /&gt;&lt;br /&gt;WE LOVED THIS!!!&amp;nbsp; I can't follow a direction so I put in 6 potatoes, a box of chicken stock, and two cans of corn AND CRAB MEAT (it was on sale).&amp;nbsp; We also added a lil cheese and cajun seasoning and it was perfect.&amp;nbsp; I'm always looking for ways to make recipes better so next time I will not put shrimp in it (it's too chewy the next day). I can't follow a recipe for the life of me so I used an orange pepper instead of green, put more garlic in it, and cooked it in a electric skillet. I had to add about 1 cup of water to it, but besides that it was super easy. If I do it in a crock pot I would add liquid there to because I was everything to soak up the flavors. I served over white rice (because it's all I had). I hope you enjoy it. Drain of excess liquid. In medium/large bowl, put the dried black beans &amp;amp; mash with fork to make a paste. Add the rest of the ingredients and mix well. Preheat oven to 400*.  Spray muffin pan with cooking spray (&lt;em&gt;I used paper cups and still sprayed and had some stickage&lt;/em&gt;).  Combine oat mixture with applesauce and egg whites &amp;amp; mix until combined.  In a separate bowl measure &amp;amp; whisk the dry ingredients together.  Add wet ingredients to dry &amp;amp; mix until just combined.  Add nuts or raisins if desired.  Do not overmix the batter or the muffins will be tough.  Spoon muffin mixture into pan.  Combine the cinnamon and sugar and top each muffin w/ some of the mixture.  Bake for 20-25 minutes or until done.  Remove from pan, cool &amp;amp; enjoy.  These can be frozen &amp;amp; reheated in the microwave for a quick breakfast.&lt;br /&gt;&lt;br /&gt;&lt;em&gt;These are pretty good for a healthy breakfast.  Next time I will definitely add some nuts for some texture. Cook on low for 6 hours, or until the chicken is cooked through and begins to shred. Shred the chicken with two large forks, and mix in the block of cream cheese. Switch the crock to high and cook for another 30 minutes, or until the cream cheese is fully melted. Remove foil &amp;amp; bake an additional 5 minutes.  Arrange ham &amp;amp; cheese in crust, set aside.  Whisk together eggs, half-and-half, onion powder, salt, &amp;amp; pepper; pour over cheese.  Cover edges of pie crust with foil B&amp;amp; bake at 400* for 35-40 mihnutes, until a knife inserted near the center comes out clean. Combine corn, black beans, &amp;amp; 1/2 salsa in slow cooker.&lt;br /&gt;2. Top with chicken. Pour remaining salsa over chicken.&lt;br /&gt;3. Bake at 400° for about 1 hour or until tender. Let cool to touch; peel and mash sweet potatoes.  Beat mashed sweet potatoes, sugar, and next 5 ingredients at medium speed with an electric mixer until smooth. Spoon potato mixture into a greased 9 x13-inch baking dish.&lt;br /&gt;Combine cornflakes cereal and next 3 ingredients in a small bowl. Sprinkle over the top of the casserole.  Bake at 350° for 30 minutes. Add the flour and mix.  Add the milk and water and stir.  Add the chicken, potatoes, buffalo sauce, and cheddar cheese.  Simmer until the cheese melts.  Add salt and pepper to taste and garnish with sour cream or mozzarella cheese.&lt;br /&gt;&lt;br /&gt;WOW-we loved this recipe. In a large bowl combine the sugar, eggs, and vanilla. Stir in the grated zucchini and then the melted butter (or oil). Sprinkle the baking soda and salt over the zucchini mixture and mix in. In a separate bowl, mix together the flour, nutmeg, and cinnamon. Stir these dry ingredients into the zucchini mixture. Stir in walnuts, if using.&lt;br /&gt;2) Coat each muffin cup in your muffin pan with a little butter or vegetable oil spray. Preheat oven to 400°F. Coat a 9-by-13-inch baking dish with cooking spray.&lt;br /&gt;2. Combine squash, onion, chiles, jalapenos, salt and 3/4 cup cheese in a large bowl. Sprinkle with flour; toss to coat. Spread the mixture in the prepared baking dish and cover with foil.3. Bake the casserole until it is bubbling and the squash is tender, ~35. Add broccoli; return to a boil.  Cook 2 minutes longer or until pasta is tender; drain. &lt;br /&gt;&lt;br /&gt;In a large bowl, combine soup &amp;amp; milk.  Stir in mushrooms, onion, salt, pepper, &amp;amp; 1/2 cup cheese.  Add pasta &amp;amp; broccoli; mix well. &lt;br /&gt;&lt;br /&gt;Transfer to a 6x8 baking dish coated w/ nonstick spray.  Cover and bake at 350 for 30 minutes.  Uncover, sprinkle w/ sunflower kernels and remaining cheese. I was about a half cup short on broccoli but had some cauliflower so I used about a 1/2 cup of that, too. I think next time I may put in about 3 cans of tomatoes with chilis or an additional can of chilis.  It was really thick and a little spicy, but not too spicy for me.  Of course Brandon wanted a little bit more spice.  It was low carbs besides the corn and we ate on it for two nights. Remove neck &amp;amp; giblets from chicken. Sprinkle rub all over inside and outside of chicken. Open can of beer and drink or discard 1/4-1/2 of it. Place all ingredients in beer can. Make sure to pierce extra holes in the top of the can and then place the chicken on top of the can. Place on cookie sheet and grill 30 minutes or until chicken reaches 170 degrees.&lt;br /&gt;&lt;br /&gt;Update 1/1/10 - apparently this can also be done in the oven.  Bake at 350* for about 2 hours, or until the thigh meat reaches 170*.  If top starts browning too much, tent with foil.&lt;br /&gt;&lt;br /&gt;&lt;em&gt;This is my favorite summer recipe. We chopped up onions, zucchini, potatoes, peppers, esparagus and tossed them in olive oil with salt &amp;amp; pepper and put them on the cookie sheet about 15 minutes w/ the chicken and it is DELICIOUS!!!! It was delic!&lt;/em&gt;&lt;br /&gt;&lt;em&gt;&lt;/em&gt;&lt;br /&gt;1 avocado&lt;br /&gt;juice of 1/2 lemon or lime&lt;br /&gt;1 can corn&lt;br /&gt;1 can black beans, rinsed&lt;br /&gt;1 bundle green onions&lt;br /&gt;3 tbsp fat free sour cream&lt;br /&gt;3/4 cup medium or hot salsa&lt;br /&gt;1 tbsp apple cider vinegar&lt;br /&gt;&lt;br /&gt;In a medium bowl, mix together the sour cream, salsa, &amp;amp; vinegar until creamy &amp;amp; well blended.  Dice the avocado and squeeze a lemon or lime over it (the juice keeps the avocado from browning so quickly).  Chop the onions and add all ingredients to the salsa mix.  Mix until all the veggies &amp;amp; beans are well coated and serve with tortilla chips. &lt;br /&gt;&lt;br /&gt;Delicious &amp;amp; healthy!  We had some corn that we had cut off the cob last year &amp;amp; froze, so I used that instead of a can of corn... It was SO GOOD! Heat oven to 400. Coat a 3-qt round baking dish w/ nonstick spray.&lt;br /&gt;2. Heat oil in large nonstick skillet over medium-high heat. Add onion and saute 5 minutes. Add zucchini and cumin, and saute 5 minutes or until zucchini is crisp-tender. Stir in tomatoes, beans, corn, and enchilada sauce; bring to a simmer. Remove from heat.&lt;br /&gt;3. Put 1 tortilla in baking dish. Top with 1 1/2 cups zucchini mixture; sprinkle with 1/4 cup cheese. Repeat layers 4 times.&lt;br /&gt;4. Heat oven to 425.&lt;br /&gt;2.  Coat a baking sheet with nonstick cooking spray.  Add zucchini and red pepper, toss w/ 1 tbsp olive oil.  Bake at 425 for 30 minutes or until tender.&lt;br /&gt;3.  Heat remaining 1 tbsp oil in a large nonstick skillet over medium-high heat.  Add garlic, cook 30 seconds to 1 minute.  Stir in tomatoes and cook for 5 minutes, stirring occasionally.  Add zucchini, peppers, chickpeas, salt, pepper, &amp;amp; red pepper flakes.  Cook an additional 5 minutes, stirring occasionally. Cook pasta following package directions.  Drain &amp;amp; return to pot.&lt;br /&gt;2.  While pasta is cooking, prepare sauce.  In a large skillet, stir together beans, tomatoes, enchilada sauce, chili powder, cumin, &amp;amp; salt.  Break up tomatoes with a wodden spoon.  Simmer over medium heat for 3 minutes, stirring occasionally.&lt;br /&gt;3.  Stir the sauce into pot w/ pasta.  Add half of the cheese, and stir to blend.&lt;br /&gt;4. Heat oven to 450.&lt;br /&gt;2. Place pizza crust on a large baking sheet. Spread 2/3 cup of the salsa over the crust. Sprinkle the cheeses over the salsa &amp;amp; scatter the veggies over the top.&lt;br /&gt;3. Bake at 450 for 10-12 minutes or until heated through &amp;amp; cheese is melted.&lt;br /&gt;&lt;br /&gt;&lt;em&gt;Unfortunately, I didn't get much feedback with the quest for more veggie-based meals... But I have been reading up and have found some that I want to try... It's been really hard since I'm used to preparing meals with meat (usually chicken) as the main course. Heat oven to 375. Spray 9x13 glass baking dish with cooking spray. In medium bowl, stir Bisquick mix and milk until soft dough forms. Drop half of dough by spoonfuls evenly over bottom of baking dish (Dough will not completely cover bottom of dish).&lt;br /&gt;2. Drizzle 1 can pizza sauce over dough. Scatter half of the pepperoni over sauce. Top with 1 cup of the cheese. Repeat layers with remaining dough, pizza sauce, pepperoni and cheese.&lt;br /&gt;3. Great for themes and holidays - So much fun!&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;1/2 C Butter, softened&lt;br /&gt;3 oz cream cheese, softened (sold pre-measured for like a $1 at Meijer)&lt;br /&gt;1 C sugar&lt;br /&gt;1/2 tsp baking soda&lt;br /&gt;1/4 tsp salt&lt;br /&gt;2 eggs&lt;br /&gt;1 1/2 tsp vanilla&lt;br /&gt;2 3/4 C all-purpose flour&lt;br /&gt;Sprinkles, Decorating Sugar (0ptional)&lt;br /&gt;1 recipe desired flavor of Buttercream Frosting (Below)&lt;br /&gt;&lt;br /&gt;In a large mixing bowl beat butter and cream cheese with an electric mixer on medium speed for 30 seconds.  Add the 1 C sugar, baking soda, and salt.  Beat until combined, scraping sides of bowl occasionally.  Beat in eggs and vanilla until combined.  Beat in as much of the flour as you can with the mixer.  Stir in any remaining flour.  Divide dough in half.  Cover and Chill dough about 2 hours or until easy to handle. (You can just leave the dough in two different bowls and cover with a towl - that way you don't have to throw out plastic wrap or foil.  Also, 2 hours is usually sufficient cooling time.)&lt;br /&gt;&lt;br /&gt;Preheat oven to 375F.  On a lightly floured surface (you'll need more flour at the beginning to prevent sticking) roll half of the dough at at time until 1/8 inch thick.  Using a heart shaped cookie cutter, cut through dough.  Place cutouts 1 inch apart on an ungreased cookie sheet.   If using decorating sugar, sprinkle it on now.  Bake for 6 to 7 minutes or until bottoms are light brown (6 minutes in my gas whirlpool oven).  Transfer to a wire rack, cool.&lt;br /&gt;&lt;br /&gt;Spread desired flavor of buttercream frosting onto cookies.  You can make sandwichs by topping with a cookie (use bottom sides for icing sides), or cover one side (top)  with icing and decorate with sprinkles.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;&lt;span style="font-size:180%;"&gt;Buttercream Frosting&lt;/span&gt;&lt;/strong&gt;&lt;br /&gt;(So easy to make - tastes just like store bought or better but for half the price)&lt;br /&gt;&lt;br /&gt;1/2 C butter, softened&lt;br /&gt;1 tsp vanilla&lt;br /&gt;2 1/2 C powdered sugar&lt;br /&gt;1 to 2 T milk&lt;br /&gt;&lt;br /&gt;In a bowl beat butter with an electric mixer on medium speed until fluffy (may take a minute or two).  Add vanilla.  Beat in half of the powdered sugar.  Beat in 1 T of milk.  Beat in the remaining powdered sugar until smooth.  Beat in enough of the remaining milk to make frosting of spreading consistency.&lt;br /&gt;&lt;br /&gt;***If you want to color the icing, add food coloring prior to adding remaining milk.  If frosting still needs to be thinned, then add a little bit of the milk at a time, mixing well in between.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size:130%;"&gt;&lt;strong&gt;Frosting variations&lt;/strong&gt;&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Citrus buttercream&lt;/strong&gt;:&lt;br /&gt;Prepare buttercream frosting substituting finely shredded lemon, orange, or lime peel for the vanilla, and lemon, orange, or lime juice for the milk.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Chocolate buttercream&lt;/strong&gt;:&lt;br /&gt;Prepare buttercream frosting, substituting 1/2 C cocoa powder for 1/4 C of the powdered sugar.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Coffee buttercream&lt;/strong&gt;:&lt;br /&gt;Prepare buttercream frosting, omitting vanilla and substituting 2 T coffee liqueur or strong-brewed coffee for the milk. Break them to fit &amp;amp; get a good layer.&lt;br /&gt;Smear a layer of cottage cheese over the noodles&lt;br /&gt;Layer veggies, mushrooms, and spinach on top of the cottage cheese&lt;br /&gt;Add a handful of the shredded cheese&lt;br /&gt;Ladle on some more of the meat sauce&lt;br /&gt;Top with more dry noodles and repeat layers until crock is to desired capacity.&lt;br /&gt;Put the 1/4 cup of water into your empty spaghetti sauce jar and shake. Combine margarine, peanut butter, sugars, egg, and vanilla. Blend together very well.&lt;br /&gt;2. Add flour, baking soda and salt with mixer. Chill dough 15 minutes in the refrigerator. Roll into balls by hand.&lt;br /&gt;3. Place on sprayed cookie sheet. Using a fork, press down the balls and create a criss cross pattern. Bake in a preheated 350 degrees F (175 degrees C) oven until edges very lightly browning (about 7 to 10 minutes). Don't overcook.&lt;br /&gt;&lt;br /&gt;&lt;em&gt;So far, these are Drew's favorites. Finely chop the spinach, &amp;amp; then mix with cream cheese, 1 cup of the mozzarella cheese and 3 tbsp. of the parmesan cheese until well blended; spread evenly onto chicken breasts. Starting at one of the short ends of each breast, roll up chicken tightly. Secure with wooden toothpicks, if desired. Set aside.&lt;br /&gt;Beat egg in shallow bowl. Mix remaining 3 tbsp. parmesan cheese and the cracker crumbs in separate shallow bowl. Dip each chicken bundle in egg, then roll in crumb mixture. Place, seam-sides down, in 13x9-inch baking dish sprayed with cooking spray. Bake 30 min. or until chicken is cooked through (165ºF). Remove and discard toothpicks, if using. Makes: 36 bars&lt;/em&gt;&lt;br /&gt;&lt;em&gt;&lt;/em&gt;&lt;br /&gt;&lt;strong&gt;Ingredients:&lt;/strong&gt;&lt;br /&gt;1/2 C btter, softened&lt;br /&gt;1/2 C shortening&lt;br /&gt;1 C sugar&lt;br /&gt;1 tsp baking powder&lt;br /&gt;1/2 tsp salt&lt;br /&gt;1 egg&lt;br /&gt;1 tsp vanilla&lt;br /&gt;2 1/4 C all-purpose flour&lt;br /&gt;1 1/2 C mint-flavor semisweet chocolate pieces*&lt;br /&gt;1 14 oz can sweetned condensed milk&lt;br /&gt;1/2 C chopped walnuts (optional)&lt;br /&gt;1 tsp vanilla&lt;br /&gt;&lt;br /&gt;*If desired, substitute semisweet chocolate pieces and add 1/4 tsp mint flavoring.&lt;br /&gt;&lt;br /&gt;Preheat oven to 350F.  In a large mixing bowl beat butter and shortening with an electric mizer on medium to high speed for 30 seconds.  Add the sugar, baking powder, and sald.  Beat until combined, scraping side of bowl occasionally.  Beat in egg and vanilla until combined.,  Beat inas much of the flour as you can with the mixer.  Stir in any remaining flour.  Set dough aside.&lt;br /&gt;&lt;br /&gt;For filling, in a medium saucepan heat and stir chocolate pieces and condensed milk over low heat until smooth, stirring occasionally.  Remove from heat.  Stir in walnuts and vanilla.&lt;br /&gt;&lt;br /&gt;Press two-thirds of the dough into the bottom of an ungreased 13x9x2-inch baking pan.  Spread filling evenly over dough.  Dot remaining dough over the filling.  Bake for 30 to 35 minutes or until golden.  Cool in pan on a wire rack. Drain off fat. Add black beans, salsa, and taco seasoning if desired. Stir until mixed thoroughly.&lt;br /&gt;&lt;br /&gt;Option 1:&lt;br /&gt;Layer a cookie or pizza sheet with all the tortilla chips. Sprinkle beef mixture over chips. Cover with cheese. I like this one b/c you can pretty much make everyone happy! And if you wanted, you could keep all the veggies, eggs, and meat separate and make it a buffet style meal, letting you and your dinner guests decide what kind of meal they would like to make it!&lt;br /&gt;&lt;br /&gt;Use as many or as few of the following veggies (use as much of each as you like too!):&lt;br /&gt;Carrots, slivered or cut&lt;br /&gt;Green pepper, chopped&lt;br /&gt;Onion, chopped&lt;br /&gt;Mushrooms, sliced&lt;br /&gt;Peas, frozen or canned (drained)&lt;br /&gt;Corn, frozen or canned (drained)&lt;br /&gt;Water chestnuts&lt;br /&gt;&lt;br /&gt;I usually use anywhere from 1/2 Cup to 1 Cup of the veggies I choose, just depending on how much food I need and how many veggies I include.&lt;br /&gt;&lt;br /&gt;2 to 4 eggs, scrambled (optional)&lt;br /&gt;&lt;br /&gt;1/4 to 1/2 stick of butter&lt;br /&gt;&lt;br /&gt;2 Cups (or more) of cooked chicken, roast, top sirloin, or pretty much any meat that may sound good to you!&lt;br /&gt;&lt;br /&gt;1 to 2 Cups rice, cooked (I cook this in a rice cooker but you could cook it on the stove too).&lt;br /&gt;&lt;br /&gt;In a large skillet, combine cooked meat of choice, veggies of choice, scrambled eggs if desired, and butter. Use the amount of eggs required for cakelike brownies. For the frosting, cream together the butter &amp;amp; cream cheese, then add the powdered sugar &amp;amp; peppermint extract. Add 3-4 drops of green food coloring. When the brownies are done baking, let them cool &amp;amp; then ice them with this green frosting &amp;amp; chill. Garnish with the chocolate frosting &amp;amp; &lt;em&gt;top with crushed peppermint candies&lt;/em&gt;.&lt;br /&gt;&lt;br /&gt;&lt;em&gt;I made these for a couple of Christmas get-togethers &amp;amp; they were a huge hit! I used dark chocolate brownie mix &amp;amp; they turned out really tasty. And so easy! I added the peppermint candies part, even though the recipe didn't call for it I wanted them to be more festive. In a separate bowl, blend together cream cheese, remaining sugar and remaining egg. Pour pumpkin mixture into greased muffin cups, filling 2/3 full. Stir in sauce; simmer until heated through. Stir in mini lasagna and cottage cheese. Spoon into a lightly greased 2-quart casserole dish; top with mozzarella cheese. Bake, uncovered, at 350 degrees for 20-25 minutes. I only diverted from the recipe a couple of times - I didn't peel my potatoes, just cubed them, &amp;amp; instead of only green beans I used mixed veggies, because it's what I had. Next time I will use less cinnamon, too, because it was a little overpowering. And since I'm a salt fiend, I added quite a bit of salt &amp;amp; it was really good... This would be great for a crockpot meal... I simmered it all day anyway! Great for a chilly fall day or a cold winter day! Crisco®&lt;br /&gt;20 glazed donut holes, Entenmann's®&lt;br /&gt;20 round jellied candies, Gummi Savers®&lt;br /&gt;20 milk chocolate candies, M&amp;amp;M's®&lt;br /&gt;Red food coloring, Schilling®&lt;br /&gt;Prep time: 30 minutes Cooking time: 5 minutes&lt;br /&gt;&lt;br /&gt;PREPARATION:&lt;br /&gt;· Line a cookie sheet with parchment paper or wax paper and set aside.&lt;br /&gt;· Melt chocolate morsels with vegetable shortening in a stainless steel bowl by setting bowl over a pan of simmering water and stirring until smooth.&lt;br /&gt;· Cut two 1/8-inch-slices from opposite soup&lt;br /&gt;1 large bag mexican shredded cheese&lt;br /&gt;1 cup sour cream&lt;br /&gt;1 small onion&lt;br /&gt;1 tbsp butter&lt;br /&gt;&lt;br /&gt;1 small can green chiles&lt;br /&gt;salsa&lt;br /&gt;a few dashes of garlic powder (optional)&lt;br /&gt;6 flour tortillas&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Cut chicken into small bite-sized cubes &amp;amp; saute. Season with garlic powder (still optional). While it is cooking, saute onion with butter. When onions are done (golden), add the cream of mushroom, sour cream, green chiles, and about 1/2 of the bag of shredded cheese. Mix until cheese is melted &amp;amp; add some salsa for flavor, if desired. Separate about 1/4-1/3 of the mix &amp;amp; add the chicken to the bigger half of the sauce. Grease a 9-13 baking dish &amp;amp; fill about 6 tortillas evenly with the chicken &amp;amp; sauce mixture. Place in pan with folded side down. Use the mix that you had set off to the side to cover the top of the enchiladas in the pan, &amp;amp; add the rest of the cheese. Bake for 30-35 minutes @ 350 degrees. Let stand for a few minutes before serving.&lt;br /&gt;&lt;br /&gt;&lt;em&gt;I tried to make this from memory the other night (Frank was supposed to come cook for us but came late so I just went ahead &amp;amp; cooked so it'd be ready when he got here) &amp;amp; forgot the sour cream. Add chicken; cover and refrigerate for 1 hour.&lt;br /&gt;&lt;br /&gt;Garlic Pesto Mayo:&lt;br /&gt;1/2 cup (125 mL) light mayonnaise&lt;br /&gt;1 tbsp (15 mL) prepared pesto&lt;br /&gt;1 clove garlic, minced&lt;br /&gt;&lt;br /&gt;Garlic Pesto Mayo: In small bowl, mix mayonnaise, pesto and garlic; set aside.&lt;br /&gt;Remove chicken from marinade; sprinkle with salt. The first is 1. Strawberry Spinach Salad, 2. Crunchy Asian Broccoli Coleslaw.&lt;br /&gt;1. Strawberry Spinach Salad&lt;br /&gt;Ingredients:&lt;br /&gt;1 Large Bag Spinach&lt;br /&gt;4 cups sliced Strawberries&lt;br /&gt;Dressing&lt;br /&gt;1/2 cup vegetable oil&lt;br /&gt;1/4 cup white wine vinegar&lt;br /&gt;1/2 cup white sugar&lt;br /&gt;1/4 tsp paprika&lt;br /&gt;2 tsp seasame seeds&lt;br /&gt;1 tsp poppyseeds&lt;br /&gt;&lt;br /&gt;Mix all the ingredients of the dressing together then pour evenly over the spinach and strawberries and mix well!&lt;br /&gt;&lt;br /&gt;2. Crunchy Asian Broccoli Coleslaw&lt;br /&gt;Ingredients&lt;br /&gt;1/2 cup Kraft Zesty Italian Dressing, divided&lt;br /&gt;2- 3oz pkg. ramen noodle soup mix&lt;br /&gt;2-12oz pkg broccoli slaw&lt;br /&gt;4 green onions, sliced&lt;br /&gt;1/2 cup Dry Roasted sunflower kernals&lt;br /&gt;1/2 cup Sliced Almonds, toasted&lt;br /&gt;&lt;br /&gt;Mix dressing with 1 seasoning packet from 1 soup mix, discard others&lt;br /&gt;Break apart Noodles, and place in large bowl. Taco Soup! It's so fast &amp;amp; easy &amp;amp; just plain good. With the arrival of true fall weather, I wanted to start making some hearty soups for chilly evenings. Drew has been working late on campus, so last night I ran some errands, &amp;amp; when I got home, I made taco soup &amp;amp; it was hot &amp;amp; ready when he got home... Perfect! :) It's so easy, you may not be able to handle it... Ready?&lt;br /&gt;&lt;br /&gt;1 big box of chicken broth&lt;br /&gt;1 jar of your favorite salsa (not too spicy unless you want very spicy soup!)&lt;br /&gt;1 packet of taco seasoning&lt;br /&gt;1 lb ground meat (I've used turkey and chicken, and I'm sure beef is good too)&lt;br /&gt;32-ounce bag of mixed veggies&lt;br /&gt;&lt;br /&gt;Combine everything except the ground meat in a pot &amp;amp; simmer. Pour meat in after browning... let simmer. Top w/ sour cream &amp;amp; chips &amp;amp; cheese! :) Delic!&lt;br /&gt;&lt;br /&gt;&lt;em&gt;Update: I made this in the crockpot for the first time the other night &amp;amp; it turned out pretty good.  Definitely easy.  I did brown the meat first, however, I don't think it is necessary depending on how long you cook everything.  I cooked it for 9+ hours on low, because that is how long we were away from the house.
