Pork Loin with Seasoned Rub

Adapted from Ellie Krieger at The Food Network

1 tsp. garlic powder
1 tsp. dried oregano
1 tsp. dried thyme
Salt & pepper to taste
1.25 lb. pork loin
1 minced garlic clove
1 tbsp. olive oil

Preheat oven to 450F.

Combine all the dry spices + salt & pepper & rub your tenderloin with them. Heat the oil over medium heat in a skillet and add the minced garlic clove, saute for about a minute and then brown your pork loin in the oil.

Transfer to a roasting pan and bake for 20 minutes or until internal temperature reaches 145F. Remove from oven and let rest for 5-10 minutes before slicing.
