Crab Cakes

These are super easy and delicious!

Adapted from this recipe over at Meals & Miles

8 oz. lump crab meat
1 egg
1 cup Asian Panko breadcrumbs
1 T. mayo
2 T. spicy brown mustard
1/2 t. honey
1/4 cup finely chopped green onion
2 t. lemon juice
2/3 cup corn
chili powder, black pepper, basil, and oregano to taste

Mix it all up in a medium-sized bowl, form into patties, and cook in a little oil on the stove.  I cooked them over medium heat for about 2 minutes on each side.  This made 6-8 good sized cakes.  I served them over a bed of greens with balsamic vinegar, olive oil, and a bit of salt & pepper.  Perfection!
