I made pumpkin cheesecake for Drew, my Mom & Dad, Grandma Ruth, & Fr. Thom for Thanksgiving. I wanted to use the rest of the can of pumpkin, so I made this. It was delicious & a great start to a fall morning!
2 cups old-fashioned oats
3 cups milk
1/2 cup canned pumpkin
1/8 tsp cinnamon
1 1/2 tbsp brown sugar
Bring milk to a boil in a medium saucepan. Stir in oats and cook on a medium heat for about 5 minutes. Add pumpkin and spices and stir until heated through. Makes 4 servings.
