1 large whole wheat Boboli pizza crust
1 cup pineapple mango salsa
1 cup shredded Monterey jack cheese
1/2 cup shredded Swiss cheese
1/2 green gepper, seeded & thinly sliced
1/2 red pepper, seeded & thinly sliced
1/2 small onion, peeled & thinly sliced
1. Heat oven to 450.
2. Place pizza crust on a large baking sheet. Spread 2/3 cup of the salsa over the crust. Sprinkle the cheeses over the salsa & scatter the veggies over the top.
3. Bake at 450 for 10-12 minutes or until heated through & cheese is melted.
Unfortunately, I didn't get much feedback with the quest for more veggie-based meals... But I have been reading up and have found some that I want to try... I have not yet tried these but they look great & most of them are really great for you!
